1 tablespoon olive oil
1 large onion, cut into 1 inch pieces
1/2 cup sliced fresh ginger root
1 1/2 teaspoons garlic powder
1 (8 ounce) package frozen mixed vegetables, thawed
1 (3 ounce) package taco seasoning mix
1 (.25 ounce) package taco seasoning
2 tablespoons hot pepper sauce
1/2 cup chopped fresh parsley
2 cups shredded Cheddar cheese
Heat 3 tablespoons olive oil in a large skillet over medium heat. Stir-fry onion and ginger until translucent. Place garlic powder and ginger mixture in skillet. Simmer over medium heat for 5 minutes, stirring constantly. Remove from heat. Add vegetables or Taco-Style Shredded Cheese, if desired. Bring to a slow simmer over medium-low heat for 4 to 5 minutes, stirring occasionally. Reduce heat to low. Saute mixture, stirring constantly, for 4 to 5 minutes or until vegetables are tender. Stir in taco seasoning mix.
Return skillet to high heat. Stir-fry onions and ginger mixture while stirring. Cook and stir until tender. Remove from heat and allow to cool slightly. Stir in taco seasoning. Heat olive oil in small saucepan over low heat.
Spoon vegetables into peppers. Place peppers in tomato-shaped dish. Top with cheese. Serve immediately.
