1 pound beef roast
2 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon ground black pepper
3 cloves garlic, minced
3 tablespoons olive oil
2 tablespoons vinegar
1 tablespoon lemon juice
1/2 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried tarragon
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon cayenne pepper
1/8 teaspoon crushed red pepper
1/4 teaspoon paprika
Preheat oven to 400 degrees F (200 degrees C).
Arrange roast in a 9x13 inch baking dish. Spray baking paper with cooking spray. Adjust oven racks to 45 degrees F (22 degrees C). Cook roast in oven broiler for 12 to 15 minutes per side, about 1 minute per pound.
Place brown sugar, salt, pepper, garlic, oil, vinegar, lemon juice, basil, oregano, tarragon, red pepper flakes, cayenne pepper, and paprika over roast, and sprinkle with crushed red pepper and oregano. Cover baking sheets or racks with parchment paper, and refrigerate overnight.
Broil uncovered for 1 to 2 hours, brushing occasionally with water. Let cool, and slice roast crosswise. After assembly, broil roast chops.
