1 pound fresh peaches, pitted
3 tablespoons margarine
1 cup chopped onion
1 tablespoon raspberry preserves
1 cup white sugar
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
1/2 teaspoon lemon zest
In a medium saucepan, combine peaches, margarine, onion, raspberry preserves, sugar, vinegar and vanilla until completely heated. Remove from heat and stir in lemon zest.
