4 sweet potatoes, cubed
1 tablespoon butter
1 1/2 cups whipping cream
4 (1 ounce) squares unsweetened chocolate, chopped
1 cup white chocolate chips
Preheat the oven to 375 degrees F (190 degrees C). Line a 2 quart pan with paper baking foil.
Lightly grease paper baking pans.
Place sweet potatoes in the pan. Fold the chocolate mixture over sweet potato cubes, setting the edges on top. Crack the chocolate seal. Pour contents of chocolate coating over hot sweet potatoes, then sprinkle remaining chocolate over sweet potatoes.
Bake in the preheated oven 8 to 10 minutes, or until toothpick inserted in center comes out clean. Cool before serving.
