1 1/2 cups whole peaches
1 cup white sugar
3/4 cup distilled white vinegar
3/4 cup white sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon dried marjoram, or to taste
1 teaspoon vanilla extract
2 teaspoons distilled lemon juice
Rub peaches with sugar and vinegar. Remove seeds from peaches. Place peaches in tightly coated glass glass dish. Spoon peach liquid mixture into peaches.
In a large bowl, mix peaches, sugar, vinegar, white vinegar, sugar, cinnamon and salt. Cover and refrigerate until serving.
In a separate medium bowl, mix lemon juice and 1 teaspoon vanilla extract. Drain lemon juice and reserve from peach liquid mixture to use next time.
