Tastings in Chile Recipe


2 pounds beef liver (meaning liver tissue), cut into 1 inch cubes

1 (16 ounce) can diced green chile peppers

1 (8 ounce) can diced onions

1 (8 ounce) can tomato juice

1 green bell pepper, trimmed and seeded

2 yellow onions, sliced into 1/4 inch rounds


Preheat oven to 350 degrees F (175 degrees C).

Place liver cubes in a large bowl. Mix together peppers and onions; drain.

Place green bell pepper, onion and tomato juice over the liver cubes. Pour a little tomato mixture over the bell pepper, then pour a little tomato mixture over the onion. Sprinkle with carrots. Top with the green onions. Return both meat and vegetable halves to the bowl. Add avocado and lemon juice. Mix together. Sprinkle with red wine and cornstarch. Sprinkle with salt and pepper to taste.

Bake at 350 degrees F (175 degrees C) for 1 1/2 hours.

Remove the meat from the oven and stir in the green bell pepper, diced onion, tomato mixture and bell pepper, then spoon over the liver meat cubes in the oven for 15 minutes.

Remove the meat from the oven, and stir in the remaining tomatoes, tomato sauce, avocado, lemon juice, wine, cornstarch, salt and pepper. Season with salt and pepper to taste and serve.
