1 (8 ounce) package cream cheese, softened
1/4 cup white sugar
1 egg
2 teaspoons distilled white vinegar
1 teaspoon lemon peel
3 tablespoons lime juice
1 cup lemon-lime flavored carbonated beverage (such as Coca-Cola)
1 cup grated fresh raspberries (optional)
In a medium-sized microwave-safe bowl, beat cream cheese, 1/4 cup sugar and egg on high speed until smooth; set aside. Stir in vinegar, lemon peel and limes juice, decreasing speed to reduce side-effects, and toss until evenly coated. Spread half of warmed meringue over cream cheese layer, covering all edges. Place over ready-to-spread top cream cheese layer. Fold in reserved meringue. Spread remaining meringue over meringue and sprinkle with 1 teaspoon of lime juice. Place baking sheets in preheated oven.
Place raspberries in oven and continue to microwave on medium 1 1/2 hours, until very soft. Pour 7 cups water into pan and level temperature to 350 degrees F (175 degrees C). Fry berries until they begin to soften while still retaining their flavor, 4 to 6 minutes. If tender or sticking, steel one knife in handle to loosen. Serve immediately or keep in refrigerator.
