2 (1 ounce) squares unsalted butter
2 eggs
1 (1 pound) loaf white Tater Tots
2 cups milk
1 cup milk
2 tablespoons milk
1/2 teaspoon salt
1 whole onion, finely chopped
1/2 teaspoon ground black pepper
2 potatoes, peeled and diced
2 cups shredded Cheddar cheese
1 (4 ounce) can shredded mozzarella cheese
Preheat oven to 350 degrees F (175 degrees C). Lightly grease 2 8-inch pans.
Melt butter in a medium skillet over medium heat. Stir in the eggs and whisk mixture until well blended. Add the milk and milk, whisking constantly until the mixture is just blended. Season with salt and pepper.
Pour into prepared pans. Bake at 350 degrees F (175 degrees C) for 25 minutes. Bake 10 minutes longer or until tester inserted in center comes out clean. Allow to cool.
Spread remaining butter over cooling tray. Let stand overnight.
Spread potatoes evenly on the bottom of a 9x13 inch glass dish. Mix some with the remaining milk mixture. Stir tomatoes into the mixture and spread over potato layer. Top with cheese. Top with mozzarella cheese.
