1 tablespoon butter
3 tablespoons brown sugar
3 eggs
1/4 teaspoon salt
1/3 cup milk
1 teaspoon vanilla extract
6 cups cornflakes cereal
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
In a medium bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then mix in the salt. Stir in the milk, 1/3 cup at a time, mixing well after each addition. Stir in the vanilla. Fold in the cereal, just until moistened.
Bake in preheated oven for 25 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue cooking muffins for 10 minutes. Remove muffins from oven and place on a wire rack.
