1 tablespoon vegetable oil
1 tablespoon all-purpose flour
1/4 cup very hot milk
1 cup white sugar
1 egg
1 teaspoon lemon zest
3 teaspoons lemon extract
1 teaspoon vanilla extract
1 quart butter, softened
1 1/2 cups milk
1 teaspoon vanilla extract
Heat the oil in a large skillet over medium heat. Saute the flour until golden brown. Stir in the white sugar, egg and lemon zest. Gradually stir in the lemon extract and lemon extract. Pour the mixture into the skillet. Sort while making sure scraps remain. Gradually pour the milk over the flour mixture. Remove from heat. Stir in the lemon extract. Simmer, stirring occasionally, for 5 minutes. Add the butter and milk until the dough is smooth. Turn onto a floured surface and knead until creamy. Divide the dough into twenty pieces. Roll into rounds. Shape each piece into a 1 inch square. Place one peach in each square. Place zucchini, orange peel, zucchini and corn on top of peach squares. Cover with a layer of fruit filling. Smooth dough and roll into 1 inch rounds. Place a strawberry on each square. Place a strawberry and peach on top of each peach. Place a peach and peach on top of the filling. Top with a cherry. Refrigerate until chilled, about one hour. Serve warm or at room temperature.
