1 (16 ounce) can refried beans, divided
1 (14 ounce) can black beans, divided
1 cup shredded Cheddar cheese
1 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley
2 tablespoons chopped onion
4 cloves garlic, crushed
1 1/2 tablespoons mayonnaise
1 teaspoon salt
2 scallions, finely chopped
In a medium saucepan, combine refried beans, black beans, cheese, mozzarella, grits, parsley, onion, garlic and mayonnaise. Heat over low heat for 1 to 2 minutes. Remove from heat.
Stir in salt, pepper and salt. Place on foil to cool. Refrigerate within 8 hours (until serving time). Serve quickly.
