1 1/2 cups water
2/3 cup orange juice
2 cups vegetable oil
2 eggs
1 egg, lightly beaten
1 cup buttermilk
3 cups all-purpose flour
5 tablespoons baking powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup crushed pineapple
2 teaspoons vanilla extract
1/2 cup chopped walnuts
1 cup butter
1 cup white sugar
1 (16 ounce) package fruit flavored Jell-O mix
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round pans or 9-inch round pans. Stir together the water, orange juice, oil, eggs, egg, buttermilk, flour, baking powder, baking soda and baking powder. Make a well in the center and pour in the pineapple, walnuts and pineapple.
Using two knives, cut the cake into 1/4 to 1/4 inch slices. Place the slices on the prepared pans, seal edges with a fork, and pinch the edges of the paper to seal in the crust.
Bake in the preheated oven for 35 minutes. Cool cake completely and sprinkle with crushed pineapple. Remove from pans and cool completely. Cool completely before frosting.
Using a toothpick, swirl lime juice, butter and sugar into the buttermilk. Place pineapple chunks over the top of the chilled cake while it is still in the pan. Shake vigorously to mixture in the top of the pan; allow the pineapple to completely encase the cake, then quickly remove when cool. Spread over cooled cake.
