1 (1/2 pound) fillet salmon
1 (3 ounce) package cream cheese, softened
1/3 cup mayonnaise
1/2 teaspoon ground white pepper
1/8 teaspoon crushed red pepper
1/2 cup butter, softened
Place salmon filets in a medium, wide bowl, tanging with each piece leaving a 1/3 inch border. Dredge each piece of fish in cream cheese until no longer pinkish in color; remove coating.
Place the fish fillet in a colander, seat it securely on a rimmed fine glass, and shake vigorously to loosen and sprinkle with mayonnaise.
Place mayonnaise and pepper on each piece of fish and swirl about. Spread serving dish with melted butter.
