2 eggs, beaten
1 1/2 cups egg white
1 tablespoon butter
1/2 cup white sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 teaspoon baking soda
3/4 cup chopped raisins
1/4 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C). Heat oven rack of broiler pan over broiler pan.
In a large bowl, stir together egg whites and butter. Stir egg white mixture until mixture as thick as coarse crumbs, add sugar, lemon juice, and vanilla. Beat egg whites with hot water until foamy. Remove from heat.
Combine flour and baking soda, gradually stir into egg whites. Beat egg whites until stiff; the mixture should be thick.
Stir raisins into egg whites. Mix together sugar and lemon juice; add to egg whites; fold into egg whites. Return mixture to pan, stirring constantly. Pour into pie crust.
Bake at 350 degrees F (175 degrees C), for 8 to 10 minutes. Do not brown. Cool. Roll into small balls and place on sheet of pie crust.
