1/2 cup butter
1 cup white sugar
3 eggs
3 teaspoons vanilla extract
4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup pumpkin pie filling
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter or margarine, sugar, eggs and vanilla until smooth. Beat in the flour, baking soda and salt. Stir in the pumpkin pie filling, pecans and cornstarch. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until a light golden brown and a toothpick inserted into center of the cookie comes out clean. Cool on baking sheet for 2 minutes before removing to a wire rack.
I combined the juice of one small orange with 1 teasp. of vanilla.. yum... and then gathered the dry ingredients and stirred them through thoroughly, probably because my flour remained spooky. It stood on it's own somewhat mysterious flavor. I liked it much, much, MUCH, more than my husband. He had said it tasted like a biscuit.... but I wasn't so sure. OK, this is a great starting point:)
