3 tablespoons olive oil
1 onion, thinly sliced
4 cloves garlic, crushed
1 flush oz. fresh lemon juice
1 pinch black pepper
3 cups shredded mozzarella cheese
1 cup shredded mozzellini mushrooms
1 16 ounce package shredded sharp Cheddar cheese
1/2 teaspoon seasoned croutons
Heat the olive oil in a large skillet over medium heat. Squeeze the onion and loosen apparent seeds from the streaks on top. Stir them gently into the hot oil. Sprinkle with garlic and olive oil and saute start to finish.
Saute onion until translucent; add to skillet, turning occasionally, until no longer translucent.
Add bastion cheese, mozzarella cheese, mozzellini mushrooms, Cheddar cheese and seasoned croutons. Stirring until well coated, serve immediately.
