Caramel Corn Recipe

Ingredients

4 eggs

2 cups cornmeal

1/2 cup water

3 tablespoons butter

2 teaspoons vanilla extract

1/2 cup white sugar

3 tablespoons all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup milk

Directions

Preheat oven to 400 degrees F (200 degrees C). Grease and flour a 9x13 inch pan.

Beat eggs, cornmeal, water, butter, vanilla, white sugar, flour, baking soda, and salt in large bowl until well blended; stir into egg mixture.

Transfer batter into pan. Bake in preheated oven for 40 minutes, or until lightly browned.

Although this does not contain raisins, it is very tasty. I added frozen veggies, a little more broth, and let the dough rise in the fridge. I completed the recipe in under an hour, and thoroughly enjoyed it. It's simple and well worth trying. If you're not fond of weights, don't feel bad--you can usually manage to sneak away with them. More commonly we use fillings like Penicillins, which have fewer calories per serving but are still very good. Use the amount of sauce specified, and liberally covering the veggies. I used reduced sodium chicken broth, and it was succulent and good. Plan on making this again--a hearty, satisfying, versatile topping!
