2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups butter, softened
1 cup packed brown sugar
1 cup white sugar
1 egg
2 eggs
1 1/2 teaspoons vanilla extract
4 tablespoons distilled white vinegar
1 cup white sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, cream together the butter, brown sugar, white sugar, egg, eggs, vanilla extract and vinegar until smooth. Stir in the flour, baking powder and baking soda; beat into the creamed mixture until well blended. Stir in the pecans. Fill muffin liners a few at a time with batter.
Bake in preheated oven for 30 minutes, or until lightly browned. Serve immediately.
