Taco Casserole Recipe

Ingredients

2 pounds ground beef

1 cup chopped onion

1 cup chopped green bell pepper

2 1/2 cups vegetable oil

1 cup diced green chile peppers

2 ounces taco seasoning mix

1 (1 ounce) package taco seasoning mix

1 (4 ounce) can refried beans

1 (1.25 ounce) package taco seasoning mix

1 (8 ounce) can Mexican-style corn

1 (4 ounce) can tomato sauce

1 (8 ounce) can refried beans

1 (6 ounce) can tomato paste

1 (8 ounce) can tomato paste with green chile peppers

1 (8 ounce) can sliced ripe olives, drained

1 (8 ounce) can sliced ripe olives, drained

2 (5 ounce) cans sliced black olives, drained

2 avocados, drained

Directions

Preheat oven to 350 degrees F (175 degrees C).

Melt the butter in a large skillet over medium heat. Saute the beef, onion, bell pepper and green peppers until meat is browned.

Stir in the oil, green chile peppers and taco seasoning. Stirring constantly, cook until meat is tender. Stirring constantly, stir in the taco seasoning mix. Stirring constantly, stir in the refried beans and tomatoes.

While meat is cooking, stir the taco seasoning into the tomato sauce and bean mixture. Mix all together, and pour over meat.

Transfer meat mixture to a 9x13 inch baking dish. Stir the refried beans and tomato sauce into the dish. Sprinkle the green chile peppers over the meat and vegetables. Sprinkle the taco seasoning mixture over the meat and vegetables. Sprinkle the tomato paste over the meat. Sprinkle the refried beans over the meat and vegetables. Top with the black olives, sliced black olives, sliced black olives and sliced black olives.

Bake in preheated oven for 45 minutes, or until internal temperature of the meat reaches 185 degrees F (80 degrees C).
