1 (3 ounce) package strawberry flavored Jello
1/3 cup pineapple juice
3 cups whipped cream
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup butter or margarine, chilled
In a small saucepan, whisk together pineapple juice, whipped cream and sugar. Bring to a boil. Cook, stirring, stirring, until thickened, about 5 minutes. Add eggs, beating well, until blended. Stir in pineapple juice, whipped cream and sugar. Continue whisking until thickened. Serve immediately.
