1 1/2 cups all-purpose flour
3/4 cup brown sugar
3 eggs
1 teaspoon vanilla extract
3 tablespoons lemon juice
1 cup butter, softened
1 1/2 cups white sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
1 cup butter, softened
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch pan. Sift together the flour, brown sugar, eggs, lemon juice and lemon rind. Set aside.
In a large bowl, cream together the 3/4 cup sugar and butter with an electric mixer or sifter until smooth. Beat in the lemon juice and butter mixture alternately with the flour mixture. Pour batter into prepared pan.
Bake in the preheated oven for 60 minutes, or until a toothpick inserted in the center comes out clean. Cool and frost with lemon sherbet and lemon icing.
