Chicken Casserole II Recipe

Ingredients

3 tablespoons butter, melted

1 1/2 cups water

1 large onion, thinly sliced

1 large green bell pepper, cut into thin strips

3 cups chicken broth

2 tablespoons all-purpose flour

1 pound shredded Cheddar cheese

Directions

Preheat oven to 400 degrees F (200 degrees C).

Lightly grease a 9x13 inch baking dish, or two 6-inch dish pans.

Melt butter and water in a small saucepan over medium heat. Stir closely, until the butter is melted. Slowly pour in the chicken broth and stir briskly. Reduce heat to low, and stir in flour, along with the chicken, cider and lime zest.

Pour into the prepared dish. Bake 15 to 20 minutes in the preheated oven, or until the chicken is cooked through and golden brown. Top with cheese, and bake 20 minutes more, until cheese is melted.
