Recipe for pumpkin bread:
1 cup margarine, softened
3 cups white sugar
2 eggs
2 teaspoons vanilla extract
5 cups all-purpose flour
6 cups pumpkin puree
2 1/2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
Preheat oven broiler. Lightly grease unheated broiler pan.
In a large bowl, cream together the margarine, sugar and eggs. Mix in the 3 tablespoons vanilla and 2 tablespoons flour. Beat in the margarine mixture until gently incorporated, alternately with the pumpkin and pumpkin butter. Stir in baking powder and baking soda. Drop by tablespoonfuls into the prepared pan.
Bake in preheated oven for 1 hour, or until a toothpick inserted at 15 to 20 minutes into the baking period comes out clean. Cool the loaf for 10 minutes, then broil until into a flan shape.
