1 cup white sugar
1 egg
1/2 cup butter
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
3 cups apple juice
1 tablespoon lemon juice
3 teaspoons lemon zest
Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch pan with waxed paper.
In a small mixing bowl, beat sugar, egg, butter and flour together until completely blended. Mix in the vanilla and lemon zest. Pour mixture into prepared pan.
Bake in the preheated oven for 40 minutes, or until peeling and bubbly. Cool to room temperature. Run knife or metal spatula around rim of pie pan to loosen crust.
