1/2 cup evaporated milk
2/3 cup cold water
1/2 cup white sugar
4 eggs
1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon
3/4 cup shredded walnuts
1/2 cup salted water
In a saucepan bring evaporated milk to a slow boil. Add cold water; boil vegetable mixture, stirring continuously for 3 minutes.
In a microwave safe bowl combine eggs, vanilla extract, cinnamon and almonds, mixing until well blended. Pour the mixture over the vegetable mixture in the saucepan. Place over simmering water, and cook until the liquid evaporates and the mixture thickens. Remove from heat and chill.
Meanwhile, stir the oats into the cold water. Stir until sugar dissolves and the pudding takes on an opaque texture. Cool 15 minutes, then stir in nuts. Round the oats up and pour them into the cooled pudding. Simmer for another 15 minutes.
