1/4 cup butter, softened
10 egg whites
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
3/4 cup vegetable oil
4 eggs, beaten
3 cups milk
1/4 teaspoon salt
Preheat the oven to 325 degrees F (165 degrees C).
Place the butter in a 2 quart casserole dish. Place the egg whites and sugar in the top of a heavy spoon. Brush the bottom of the pan with baking soda. Coat evenly with baking powder and oil.
Bake for 10 minutes in the preheated oven. Remove from oven and sprinkle with crushed tomato. Lower pan onto a wire rack, cool, and cut into bars if desired. Wrap each cookie in waxed paper and refrigerate until serving.
