3 tablespoons olive oil
1/4 cup mayonnaise
3 tablespoons dried onion flakes
4 slices bacon, sliced into 1 inch strips
1 1/2 cups shredded Swiss cheese cheese
1/2 onion, diced
6 slices Cheddar cheese
1 cup shredded lettuce
1 cup shredded Swiss cheese
1 teaspoon taco seasoning
1/3 cup sliced fresh mushrooms
In a medium saucepan blend the olive oil, mayonnaise, onion flakes, bacon, cheese, onion, 4 slices cheese, lettuce, cheese, mushroom and bacon. Bring to a boil, stirring frequently, then reduce heat to medium low.
Add the bacon, Swiss and mushroom; stir until well blended. Cover the pan, and cook over medium heat for 3 to 5 minutes, stirring constantly. Remove from heat, and stir in taco seasoning.
Return pan to medium heat. Place 1 cup of the pasta mixture in the center of the pan, and add 1/2 cup of cheese. If desired, top with lettuce, Swiss cheese or cheese curds. Top with mushrooms. Place lettuce and cheese over pasta mixture.
