Roasted Eggplant and Cherry Tomato Mincemeat Recipe
6 large eggplants
2 tomatoes, pits removed
2 zucchinis, seeds removed
1 tablespoon cayenne pepper
2 teaspoons ground cumin
1 teaspoon ground turmeric
1 teaspoon salt
freshly ground black pepper to taste
1/4 teaspoon ground dry mustard (use a mild sauce, occasional use of hot pepper on salad for too much heat)
Place eggplant and tomatoes in a large bowl, toss, and drain. Reserve 3/4 cup of liquid in bowl, discard remaining liquid. Pour 1/4 cup eggplant liquid into bowl and toss until eggplant juice and juice is evenly distributed. Stir in zucchinis and cayenne pepper. ANOTHER 1/4 cup from drained meat 1 tablespoon mustard (or enough to cover eggplant)
