1 cup white sugar
1 cup apple cider vinegar
1/4 teaspoon ground cardamom
1 teaspoon vanilla extract
1 tablespoon lemon juice
3 tablespoons cider vinegar
In a mixing bowl, mix half of the sugar, apple cider vinegar, cardamom and vanilla extract. Mix or spread onto the outside of the loaf. Cover and chill overnight in refrigerator; shape into a loaf about 30 minutes after slicing overnight.
Preheat oven to 350 degrees F (175 degrees C).
Spread bread on a large baking sheet. Bake in the preheated oven for 30 minutes. Remove bread from oven, and pour lemon juice into the loaf. Bake for an additional 15 minutes to preheat lemon juice to 400 degrees F (200 degrees C), or until the loaf springs back when touched.
I made this for Easter, and it was very popular ! I put the apricots in the freezer to test when I would make them again, and they turned out great... crisp and bright.
