6 cups French coffee
2 cups sugar
2 eggs, beaten
1 teaspoon vanilla extract
1 1/4 teaspoons apricot preserves
1 banana
1 (11 ounce) package vegan butter leek shake mix
In a large blender bowl, cream together the sugar, eggs and vanilla until the mixture is smooth. Mix apricot preserves, banana, leeks and vanilla into the creamed mixture until well blended. Pour into glasses; serve each filled glass with a butter leek.
