Cookie Pie II Recipe

Ingredients

1 (3 ounce) package instant vanilla pudding mix

2 cups vegetable oil

1 (8 ounce) package cream cheese, softened

2 (4 ounce) cans whipped cream

2 eggs

1 teaspoon vanilla extract

1 1/2 cups butter, softened

3/4 cup confectioners' sugar

1 (8 ounce) package cream cheese, softened

2 (4 ounce) cans whipped cream

1 cup confectioners' sugar for frosting

Directions

Preheat oven to 300 degrees F (150 degrees C).

Place eggs in a medium saucepan and cover with cold water, keeping them in the water. Bring water to a boil, remove from heat. Mix in pudding mix, vegetable oil, cream cheese and vanilla. Bring mixture to a boil, then cover and let stand for 15 minutes.

Remove from heat, beat in softened butter. Mix in eggs and vanilla.

Place cream cheese and whipped cream in a medium bowl; beat until smooth. Beat in confectioners' sugar and whip until fluffy. Gently spread cream cheese mixture on top of pie.

Bake pie in preheated oven for 40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before frosting.
