3 egg whites
1/2 teaspoon vanilla extract
2 1/2 teaspoons lemon zest
2 tablespoons sweetened orange juice
2 tablespoons margarine
3 cups milk
1 1/2 cups white sugar
1 teaspoon instant coffee granules
1/3 cup coconut milk
1 tablespoon lemon zest
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon lemon juice
Preheat oven to 350 degrees F (175 degrees C). Roll pastry into a 9 inch rectangle and spray with cooking spray. Cut into 9 inch squares. Roll each square into a 9 inch segment. Place on a platter, covering all sides of edges with foil.
Place cream of tartar in a large bowl. Stir together egg whites, lemon zest, orange juice, margarine, milk, sugar, and instant coffee. Beat until stiff but not dry. Fold into coconut milk and lemon zest mixture, then pour over pastry. Sprinkle with lemon juice and lemon zest.
Bake in preheated 350 degrees F (175 degrees C) oven for 45 minutes.
