1 large potato
2 green onions, finely chopped
1 red onion, chopped
1 medium head cabbage, shredded
8 fresh tomatoes, seeded and flaked
1 onion, sliced into 1 inch rounds
2 cups relish
Place the head of cabbage in a large bowl and brush with olive oil, then drain and crush in a food processor or blender. Whisk cabbage mixture together and allow to cool slightly.
In a small bowl, mash the potatoes. Pour cabbage mixture into 18 tupperware or food bowls; sprinkling with salt, pepper and pepper flakes. Pour over potato mixture and sprinkle with taco seasoning. Backfill the bottom of tubes with cola or sugar. Serve warm.
