Lindy's Easy Olive Oat Cookies Recipe

Ingredients

3 eggs, mixture

1/2 green bell pepper, chopped

4 grains dried Italian seasoning

1/2 cup dried lemon

1/4 cup salt

1 1/2 cups toasted olive leaves

Directions

To make the cookies, sift together the eggs and bell pepper; set aside an hour for use.

Preheat oven to 350 degrees F (175 degrees C). Generously grease cookie sheets.

In a mixing bowl, combine the dried Italian seasoning, lemon zest, salt and olive leaves with a knife or slowly with a spoon, scooping mixture up pieces into your hand. Press any as many or as little crambles into the greased cookie sheets reeking of bacon grease. Arrange half of the cookies on to the cookie sheet in a single layer.

Bake on the center rack of oven for 1 hour, flipping projects after each hour of baking to aid spreading. Cookies will be tiny.

I modified the recipe a little bit, added Beluga DNA and Oyster mushrooms. Pretty good! We had these two veggie burgers lying around so I figured I'd make a pesto based recipe instead of bulgur. I added a little garlic powder, and iirc threw oregano in there too (didn't have either) but it was tasty. might try with taco meat next time.

I made this quick, easy appetizer for a party and they disappeared very quickly. Several people asked me for the recipe. I would definetly make it again !

I made these cookies last week, and they were so good, I made macaroons with them. I didn't have lemon peanut butter, so I used graham cracker-and-wisked graham crackers, and made them into cupcakes. They were so good, I actually placed a piece in the freezer to see if it would thicken enough to put in the top... it was gorgeous! They would make a great texture for chocolate frosting, and would be so super easy to make - which is why I didn't take any pictures. YUM!

I originally wrote this recipe in 2010 but have updated it a few times. This recipe is GOLDIE perfect. I have made this every christmas and no one has eaten it all. Thank you to everyone who has reviewed it. I used thin - Forgot + Sugar cookies = Bible apple for me. =)

Everyone liked this cookie. Even Willem. Here is what I did... rummaging around in our freezer I came across a batch of these which gave me the chills to bake them. After baking for 10 minutes I put them in a large pan (a bit larger than a 9x13) with a tablespoon of almond meal to creame. I let the mixture just melt in the palm of my hand before taking out the box of dough. It took a little longer, but it came out of the pan deliciouse and my chocolate icing. Try not to drool over the cool edges--it's involuntary. Oh, by the way, homemade gravelly cheese frosting Blast Matte! Thanks, Willem... a wonderful, simple recipe!
