1 gallon sweet pickle relish
4 (7 ounce) loads frozen mixed vegetables, thawed
2 (2 ounce) cans tomato sauce
1 large tomato, seeded and chopped
In a blender or food processor, mix the relish, mixed vegetables and tomato sauce; pulse until smooth. Fold in the relish mixture. Cover and refrigerate overnight.
At noon, place warm water in medium saucepan, just enough to cover. Stirring occasionally, bring water to a boil. Boil about 10 minutes, stirring frequently, until rice appears nearly white. Drain and remove lid from rice, but reserve liquid.
Remove cans of mixed vegetables from refrigerated ice; refrigerate in freezer container.
Prepare a large baking dish by oiling the inside of the jar. Roll vegetables into 1 1/2.8 inch balls and place on top of baking dish. Place lid on jar and place in freezer for 3 to 4 hours.
While filling is cooking, slice tomato into slivers. Pack diced tomato into filling. Pour filling over vegetables. Serve warm. (Note: You may find that filling comes out for even more filling!)
