2 pounds skinless, boneless chicken breast halves
1 2 cups lemon-lime flavored carbonated beverage
1 cup water
1/2 cup rapeseed oil
1/2 cup light, unsalted butter, melted
1 (8 ounce) can hot cooked chicken breast meat
1/4 cup chopped onion
1/4 cup chopped carrot
In a large stockpot, crush chicken breasts with a mortar and pestle, and place in the bottom of the pot. Pour in lemon-lime soda and bring to a boil. Reduce heat, and simmer for 10 minutes. Cover, and simmer for 5 minutes. Stir in water, cut cream into the pot, and mix together with chicken, lemon-lime soda, chicken, carrot and onion. Bring to a boil; reduce heat to medium. Heat slowly, stirring occasionally, until chicken is no longer pink and juices run clear. Cover, and simmer over low heat for about 20 minutes. Remove from heat, and let stand 15 minutes.
Preheat grill for high heat. Place chicken on grill, and brush with melted butter. Brush lightly with hot water. Place chicken on the grilling surface, and brush with lemon-lime soda. Sprinkle with reserved chicken meat (optional), and chicken is well done. Grill for 2 to 3 minutes, turning over chicken every 5 minutes to prevent sticking.
Place chicken on a plate, and top with juice from carrots.
Grill idyllically over medium heat for 15 minutes, turning chicken once. Serve with salad dressing dressing, if desired.
