Caramel Corn Bread Recipe

Ingredients

1/8 cup butter or margarine, divided

2 cups white sugar

1/4 cup cornstarch

1 (18 ounce) can caramel-colored corn syrup

1 egg, beaten

1 tablespoon vanilla extract

3 cups cornstarch

3 cups white sugar

4 tablespoons cornstarch

1 teaspoon baking soda

1 teaspoon salt

1 cup chopped walnuts

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.

In a large saucepan, combine butter, sugar, cornstarch, corn syrup, egg, vanilla extract, cornstarch, sugar, cornstarch, baking soda, salt, chopped walnuts and olive oil. Mix thoroughly.

In a large bowl, cream together the cream cheese, 1/3 cup of margarine, 1/2 cup white sugar, 1/4 cup cornstarch, cream cheese, 1/4 cup margarine and 1 tablespoon vanilla until smooth. Beat in the cornstarch mixture and mix gently. Mix in the flour mixture, then the corn syrup mixture. Beat in the egg and sprinkle with more sugar if desired.

Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Allow to cool completely.
