2 tablespoons vegetable oil
3 medium onions, sliced
1 medium tomato, seeded and chopped
1 medium onion, diced
6 cups water
2 tablespoons all-purpose flour
1 cup uncooked white rice
1 cup uncooked white rice
1 1/2 cups water
1 teaspoon salt
1 teaspoon ground black pepper
Heat oil in a large saucepan over high heat. Add onions and tomato and saute until lightly browned, about 5 minutes. Stir in water and cook about 1 minute more.
Place rice in a large saucepan and bring to a boil over high heat. Remove from heat and stir in flour and salt. Stir into rice mixture. Bring to a boil, reduce heat, and simmer for 2 minutes. Remove from heat and add salt and pepper.
Cover the rice mixture and let stand about 5 minutes. (NOTE: My grandmother, who was raised in a rice cooker, would not allow me to add water, but she would allow me to add some rice to the rice in the remaining 2 minutes.)
Cook over high heat for about 45 minutes or until rice is tender. Drain and reserve 1 cup of the liquid.
