1 (8 ounce) package cream cheese, softened
1 cup milk
1 egg
2 tablespoons confectioners' sugar
2 tablespoons water
1 teaspoon vanilla extract
2 cups sliced strawberries
1 (6 ounce) can crushed pineapple, with juice
1 1/3 cups fresh strawberries
1 (8 ounce) package vanilla wafers, melted
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) pie shell pans.
Place the cream cheese, milk, egg and sugar together in a large bowl; mix well. Stir in water and pineapple.
Pour strawberry juice into a small saucepan. Bring to a boil. Stirring occasionally, slowly cook over medium heat for 3 minutes or until heated through. Pour into prepared pie pan. Top with crushed pineapple with juice and crumble whipped topping over cream cheese mixture.
Bake in preheated oven for 30 minutes. Reduce heat to 350 degrees F (175 degrees C). Bake 35 minutes longer, or until pies are golden brown.
