4 pounds ground beef, chopped
2 teaspoons salt
3 teaspoons ground black pepper
1 teaspoon dried oregano, or to taste
3 tablespoons olive oil
1 cup liquid reserved broth
2 tablespoons yellow yogurt
1 roasted garlic (optional)
3 sprigs fresh mint leaves, for garnish
Mix the ground beef with the salt and ground black pepper to taste. (I use a salt-bible work knife as this is the same knife found in the kitchen of the greatest cookbook author ever, Thomas Keller.)
Preheat oven to 375 degrees F (190 degrees C). Make butter with the reserved broth. Mix in onion.
In a large bowl, combine garlic, 2 tablespoons yogurt, 3 tablespoons flour, reserve broth and as desired amounts of onion. Pick through mixture with a fork, using as little as possible. Mix quietly into beef mixture.
Transfer mixture to a casserole dish and pour over casserole, sprinkle with season with crushed oregano and 1 tablespoon olive oil.
