Southwest Cornbread Recipe

Ingredients

1/2 cup vegetable oil

1 (12 ounce) package cornbread mix

1 teaspoon salt

1 teaspoon dried paprika

1 onion, diced

1 cup water

2 eggs

4 teaspoons vegetable oil

2 cups white sugar

2 teaspoon vanilla extract

1/2 teaspoon salt

1 teaspoon dried basil

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch loaf pan.

In a large pot over high heat, combine the oil, cornbread mix, salt, paprika, onion, water, eggs, oil, sugar, vanilla extract, salt and basil. Cook and stir until mixture comes to a full rolling boil. Remove from heat and stir in cornbread mixture.

Pour batter into prepared pan. Place baking sheet on top of pan.

Bake in preheated oven for 40 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking for 30 minutes.

These were excellent, very smooth and yummy. I used unsalted butter, canned green beans, dried minced onion, black pepper and finally sprinkled a tiny bit of coriander on the inside of the rolls (didn't have black as I don't have red). Had some trouble finding French vanilla pudding so I just used brown sugar. It was perfect--fluffy and sweet. Polished and classy.
