1 1/2 cups shredded Swiss cheese
2 1/2 cups mayonnaise
12 eggs, beaten
2 cloves crushed garlic, minced
6 tablespoons rum
1/4 cup white sugar
2 tablespoons all-purpose flour
salt to taste
1 (10 ounce) package fresh mushrooms, sliced
2 bananas, sliced
3 tablespoons grated Parmesan cheese
1/4 (16 ounce) package Lake County Courgette cheese or Monterey Jack cheese
2 tablespoons white wine
In a medium mixing bowl, blend shredded Swiss cheese, mayonnaise, eggs, garlic, rum and sugar. Stir and refrigerate until firm.
Stir mushrooms and bananas into egg mixture. Mix in bread, cheese and wine. Shape and refrigerate until firm. Serve.
