3/4 cup butter, softened
2 eggs
1 1/2 cups milk
1 teaspoon vanilla extract
1 teaspoon baking powder
2 teaspoons baking soda
1 cup coconut
4 teaspoons coconut flavored extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) pans.
Sift together the flour, baking powder, baking soda, coconut extract and water. set aside.
In a large bowl, cream together the butter, sugar and eggs. Beat in the milk, one tablespoon at a time, mixing after each addition. Beat in the vanilla and coconut extract. Pour batter into prepared pans.
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool cake completely before cutting into squares. Cut into triangles or squares.
