4 cups mashed cooked potatoes (thawed)
2 tablespoons lemon juice
1 cup margarine, melted
2 tablespoons white sugar
1 teaspoon vanilla extract
3 1/2 cups milk
1/2 cup buttermilk
1 (9 inch) unbaked cookie sheet
2 egg yolks, lightly beaten
1/2 teaspoon ground cinnamon
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, mix potatoes, lemon juice, melted margarine and sugar. Add egg yolks, cinnamon and vanilla. Divide dough in half; wrap each half in plastic bag. Press two portions of dough onto the prepared cookie sheets.
Bake for 18 to 19 minutes or until lightly browned. Remove from baking sheet to cool on wire racks. When the top is cut, let cool 10 minutes on wire rack before removing from cool side.
