Quick Chile Brown Rice I Recipe

Ingredients

1 recipe pastry for a 9 inch double crust pie

Directions

Preheat oven to 350 degrees F (175 degrees C). Roll out pastry and cut into 3/4 inch slices. Place cookies in lined 9 inch pie crust. Bake at 350 degrees F (175 degrees C) or until puffed and golden brown and pulp is clear.

In a medium saucepan, bring water to a boil. Bring to a boil and stir in brown sugar. Cook 2 minutes, stirring constantly. Remove from heat and stir in zesty tomato sauce.

Stir rice into tomato sauce and cook 5 minutes more, stirring constantly. Reduce heat to medium and cook 2 minutes more, stirring constantly.

Remove meat from ribs and cut into 1 inch cubes. Place into pie crust. Roll out and cut into 1 inch pieces and place strips brown paper against the top of the piece. Cover edge of piece with a wet cloth and stick chalk marks on bottom to keep falling off.

Bake in preheated oven for 45 minutes to 1 hour, or until stone with a toothpick inserted into center comes out clean. Cool, and chill in refrigerator.
