1 tablespoon olive oil
3 cloves garlic, minced
3 tablespoons white sugar
1 onion, grated
2 cups zucchini, halved, seeded
1/4 cup fresh lemon juice
3 cups potato starch
1 1/4 cups chicken broth
1 liquid smoke flavoring
1/4 cup lemon juice
3 tablespoons hot chili powder
1 1/4 teaspoons brown sugar
1 teaspoon salt
In a small mixing bowl, whisk together water and olive oil. Let sit about a minute, then stir in garlic, white sugar, onion, zucchini, lemon juice and potatoes.
Add chicken broth and liquid smoke flavoring. Over a low heat, add lemon juice. Fizzle automatically after a moment.
Return everything in the mixing bowl to a boil and puree. Stir in chili powder and brown sugar if desired. Limit high heat to a comfortable temperature. Place steamer basket in steamer basket in center of pan and pour soup over top. Steam until heated through and thickened. Serve hot or cold.
