1 teaspoon vegetable oil
1 cup uncooked brown rice
1 (1.25 ounce) package instant yeast bread mix
2 cups milk
1/2 cup frozen green peas, thawed
1/2 cup frozen broccoli, chopped
1 cup frozen broccoli tips, chopped
2 teaspoons white sugar
1 teaspoon salt
1/2 teaspoon lemon zest
Heat oven to 350 degrees F (175 degrees C).
Place oil and brown rice in a large bowl. Mix together as directed on package, adding water as needed. Mix in brown rice vinegar, milk, peas, broccoli and broccoli tips.
Pour rice mixture into a 3 quart casserole dish. Sprinkle some of the sliced lemon zest on the top, stirring occasionally with a wooden spoon.
Bake in the preheated oven for 30 minutes, or until the rice is cooked and bubbly.
