1 sweet onion, sliced in 1/2-inch layers
1 clove garlic, chopped
1 cup olive oil
1 cup water
3 bay leaves
1/2 teaspoon dried salt
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried rosemary
1 teaspoon dried basil
1 teaspoon dried sage
1/2 teaspoon dried thyme
2 tablespoons red wine
Place onion, garlic and olive oil in a large pot; add water and bay leaves. Bring to a boil over medium heat; cook, stirring, for 5 minutes or until water just covers the bottom of the pot. Remove from heat and stir in all-purpose flour-addition-to-water mixture. Return mixture to a boil; stir in vinegar, salt, basil, oregano, rosemary, basil, sage, thyme, wine and chicken bones. Bring to a partial boil; reduce heat.
