1 cup boiling water
1/2 cup white sugar
4 egg whites
1 teaspoon vanilla extract
4 cups cocoa
1 1/4 cups evaporated milk
3/4 cup grated maraschino cherries
1/2 cup maple syrup
1 teaspoon almond extract
In a large glass or metal bowl, beat boiling water and sugar, then beat egg whites and vanilla until light and fluffy. Beat in cocoa until stiff. Gradually mix in evaporated milk, stirring well after each addition.
Heat the syrup in large heavy-duty saucepan over medium heat until boiling.
Add cherries and maple syrup and heat until gently jellylike. Add to milk mixture. Allow the syrup to heat through and pour syrup into lined 9x13-inch baking dish.
When syrup is heated, pour mixture into baking dish and serve.
Bake in preheated oven for approximately 1 hour to 1 1 hour and 10 minutes, or until a toothpick inserted in center comes out clean. Cool completely before cutting into squares.
