1 (10.5 ounce) can diced green chile peppers, drained
1 (10 ounce) package frozen mixed vegetables
1 (10.5 ounce) can white rice
1 cup cooked chicken breast meat
1 cup cooked white rice
1 cup cooked chicken breast meat
1/3 cup sliced onions
salt and pepper to taste
Place chile peppers in a large pot over high heat; reduce heat to medium heat. Sprinkle with mixed vegetables and rice. Reduce heat to low and add chicken. Cook, stirring, for about 10 minutes, stirring occasionally.
Add meat, onion and salt and pepper to taste. Cover and simmer for about 20 minutes.
